I love this dish! Hearty, fatty, cheesy, and delicious. I used to make something like this on P-Day…buon appetito!

This dish is long in the cooking, but so good, how can I not share it with you? It takes about all day to get the sauce right…my mouth is watering just thinking about it.

Thanks to Marco Reid who first introduced me to this dish in Firenze! Ciao Marco! I’m substituting screaming monkey heads for penne. I just haven’t found any in the States. Sorry.
